Avocado & Cucumber Caprese Salad

Servings: 1 person, 1/2 lean, 2 green, 1 fat, 1.125 condiments

Ingredients:

  • 1/2 cup grape tomatoes, about 6 (1 green)

  • 1/2 cup cucumber (1 green)

  • 1.5 oz, about a half of Avocado (1 fat)

  • 2oz. mozzarella balls, about 6 (1/2 lean)

  • 1 tbsp fresh basil (1/8 condiment)

  • 1 tsp balsamic vineger (1 condiment)

 

Directions:

  1. Cut tomatoes and mozzarella into halves

  2. Cut the cucumber and avocado into chunks

  3. ​Toss with vinegar and basil

  4. ENJOY!
