Cauliflower "Wings"

Two Ways

Servings: 2

Each Serving: 3 greens, 3 condiments, 2 fats, 1/2 Medifast meal

Ingredients:​

  • 1 small head cauliflower, 150g after cut into pieces (3 greens)

  • 6 Tbsp almond flour (2 fats)

  • 1/2 cup unsweetened almond milk (1/4 condiment)

  • 1/4 teaspoon sea salt (1/2 condiment)

  • 1/4 teaspoon ground black pepper (1/4 condiment)

  • 1 puffs Medifast Meal (Chili Puffs for Buffalo wings OR Parm Puffs for Teriyaki wings)

  • 4 Tbsp of Hot Sauce OR  2 tsp of Teriyaki sauce (2 condiments)

Directions:

  1. Preheat oven to 450 F degrees.

  2. Brake the cauliflower florets into pieces to resemble the size of wings and discard stems.

  3. In a bowl crush the Medifast Puffs into "bread crumbs".

  4. In a separate bowl, mix together almond milk, salt, pepper, and almond flour to make the batter.

  5. Dredge each piece of cauliflower in the batter and shake off the excess batter. 

  6. Then, completely coat the cauliflower in breadcrumbs.

  7. Place them on a foiled baking sheet with space in between.

  8. Repeat steps 5 to 7 until all of the "wings" are coated.

  9. Bake the "wings" for 22 minutes. 

  10. Remove from oven. You can stop here and serve the wings sauce-less with the sauce on the side to dip. The wings will be crispy this way. Alternatively, coat the wings in the sauce. With a pastry brush, brush the sauce onto the "wings". Bake for another 5 minutes for the sauce to soak into the wings.

  11. Remove from oven and serve immediately.

  12. Enjoy!
