Cauliflower Chicken Alfredo

over Veggetti

Servings: 4 people, 1 leaner pp,  3 condiment pp, 1 fat pp

Ingredients:

  • about 2.26lbs Chicken Breast, 24 oz cooked (1 leaner pp)

  • 4 tsp Olive Oil (1 fat pp)

  • 4  tsp Poultry Seasoning  (1 condiment pp)

  • 1/4 tsp salt (1/4 condiment pp)

  • 1/2 tsp pepper (1/4 condiment pp)

  • 1/2 head of cauliflower, 2 cups (1 green pp)

  • 1/4 cup reduced fat Parmesan Cheese (1/2 condiment pp)

  • 1/4 cup light Cream Cheese (1 condiment pp)

  • 4 cups Veggetti (2 greens pp)

Directions:

  1. Steam the cauliflower and veggetti in the Instant Pot (5 minutes), microwave or stove.

  2. Season the chicken with Poultry Seasoning

  3. Saute the chicken in olive oil until cooked through

  4. Place the cooked cauliflower in a Food Processor, add the Parmesan and Cream Cheese and blend until smooth.

  5. Plate with 6oz chicken, 1 cup veggetti, and 1/4 of the Alfredo sauce per person

  6. ENJOY!

Modifications for my non-dieting hubby:

I make my hubby regular pasta noodles and he can have regular Alfredo sauce if he wants.
