Cucumber Caprese Salad
Servings: 1 person, 1/2 lean, 2 green, 1 fat
Ingredients:

1/2 cup grape tomatoes, about 6 (1 green)

1/2 cup cucumber (1 green)

2 Polly-O String Cheese, or 2oz mozzarella cheese (1/2 lean)

1 tbsp fresh basil (1/8 condiment)

2 tbsp Walden Farms Sugar Free Balsamic Vinegar (1 fat)
Directions:

Cut tomatoes, mozzarella, and cucumbers into chunks

Toss with vinegar and basil
