Cucumber Caprese Salad

Servings: 1 person, 1/2 lean, 2 green, 1 fat

Ingredients:

  • 1/2 cup grape tomatoes, about 6 (1 green)

  • 1/2 cup cucumber (1 green)

  • 2 Polly-O String Cheese, or 2oz mozzarella cheese (1/2 lean)

  • 1 tbsp fresh basil (1/8 condiment)

  • 2 tbsp Walden Farms Sugar Free Balsamic Vinegar (1 fat)

 

Directions:

  1. Cut tomatoes, mozzarella, and cucumbers into chunks

  2. ​Toss with vinegar and basil

  3. ENJOY!
