Cupcake Pizza

with Cauliflower Crust

Servings: 4 people, 3 pizza cups pp, 1/2 lean pp, 3 green pp, 3 condiment pp

 

Ingredients:

  • about a 1/2 head of Cauliflower, 4 cups (2 greens pp)

  • 1/4 cup Egg whites or 2 large egg white (0.017 lean pp)

  • 1/8 cup Low Fat cottage cheese (0.02 lean pp)

  • 1/4 cup reduced fat grated Parmesan cheese (1/2 condiment pp)

  • 1/2 tsp dried Oregano (1/4 condiment pp)

  • 1/4 tsp Garlic Powder (1/8 condiment pp)

  • 1/4 cup Mini Turkey pepperonis (1/4 lean pp)

  • 4 oz. low fat Mozzarella cheese (1/4 lean pp)

  • Pam cooking spray (1 condiment pp)

  • 1 cup Rao's Marinara Sauce (1 green pp)

 

Directions:

  1. Preheat oven to 425F. Spray 12 muffin tin with cooking spray.

  2. Brake cauliflower into pieces and pulse in Food Processor until it is a rice-like texture.

  3. Microwave cauliflower rice for 8 minutes (do not cover).

  4. Stir in other ingredients to cauliflower, except for mozzarella cheese and a few pepperonis.

  5. Microwave mixture for another 2 minutes. Mix again.

  6. Divide mixture evenly into muffin tin. Press mixture down to compact.

  7. Bake for 30-35 minutes until starts to turn golden brown.

  8. Add mozzarella cheese and pepperonis to top of each muffin.

  9. Bake until cheese is melted about 5 minutes.

  10. Heat marinara sauce to use as dip.
