Mashed Cauliflower Shepherd’s Pie

Servings:

6 people, 1 leaner pp, 3 greens pp, 2.61 condiments pp, 1 healthy fat pp

 

Ingredients:

Cauliflower mash:

  • 1 large head cauliflower, about 7 cups riced (2.33 greens)

  • 3 light laughing cow cheese wedges (1 fat and 1 condiment)

  • ¼ cup almond milk (0.0416 condiments)

  • 2 cloves minced garlic (0.33 condiment)

  • ¼ tsp pepper (0.083 condiment)

  • ¼ tsp salt  (0.083 condiment)

Filling:

  • 2 pounds lean ground turkey (1 leaner)

  • 1 cup tomato sauce (<5g carbs) (0.33 condiments)

  • ½ cup beef broth (0.083 condiment)

  • 3 cloves minced garlic (0.5 condiment)

  • ¼ tsp pepper (0.083 condiment)

  • 2 cups green beans (0.66 green)

  • 1 tsp thyme ( 0.083 condiment)

 

Directions:

  1. Preheat oven to 350.

  2. Microwave cauliflower rice for 10 minutes (do not cover).

  3. Place the cooked cauliflower in a Food Processor, add the rest of the cauliflower mash ingredients and blend until smooth.

  4. In a large skillet, brown the ground turkey until it is not pink.

  5. Add in the pepper, tomato sauce and beef broth.

  6. Bring the mixture to a simmer and stir occasionally for 10 minutes.

  7. Cut green beans into small bites (the size of peas, to mimic texture).

  8. Add green beans, thyme, and garlic to pan. Stir well to combine and cook for two minutes.

  9. Spread the mashed cauliflower over the turkey mixture.

  10. Bake in the oven for 20 minutes and then Broil it for 7 minutes until the edges of the mashed cauliflower are browned.

  11. Rest the pie for about 15 minutes before serving.
