Mexican Stuffed Peppers
with cauliflower rice
Servings: 4 people, 1 leanest pp, 2 greens pp, 2 condiments pp
Ingredients:

4 bell peppers, 10.52 ounces (1 green)

1 pound <99% fat ground turkey (0.57 lean)

2 tsp Fajita seasoning (1 condiment)

4 tbsp Salsa (1 condiment)

2 cup Cauliflower (1 green)
-
6.88 oz Cheddar cheese = 1.72 oz each pepper (0.43 lean)
Directions:
1. Cut the top off of the peppers and de-seed them
2. Pre-boil the pepper for about 10-15 min till soft
3. Cut up cauliflower
4. Place Cauliflower in Food Processor
5. Pulse in Food Processor until it makes "rice"
6. Place "rice" in bowl and cover with plastic wrap. Mircowave for 1.5 minutes.
7. Drain out excess water using a paper towel and strainer
8. Add ground turkey to a pan. Stir thoroughly until turkey is cooked though.
9. Add fajita seasoning and mix in well
10. Mix togther turkey, salsa, and "rice"
11. Split into 4 equal sections
12. Weight out 1.7 oz of cheese
13. Put half the cheese into the bottom of the pepper
14. Stuff the pepper with one section of the turkey mixture
15. Top with other half of cheese
16. Repeat steps 11 to 14 for each pepper
17. Bake for 25-30 mins at 400F
