Pepperoni Pizza

with Cauliflower Crust

Servings: 2 people, 1 lean pp, 3 green pp, 2.75 condiments pp

 

Ingredients:

  • about a 1/2 head Cauliflower, 2 cups riced (4 green total, 2 green pp)

  • 1/4 cup Egg whites or 1 large egg white (1/8 leanest total, 1/16 leanest pp)

  • 1/8 cup Low Fat cottage cheese (0.08 leanest total, 0.04 leanest pp)

  • 1/4 cup reduced fat grated Parmesan cheese (4 condiments total, 2 condiments pp)

  • 1/2 tsp dried Oregano (1 condiment total, 1/2 condiment pp)

  • 1/4 tsp Garlic Powder (1/2 condiment total, 1/4 condiment pp)

  • 1/2 oz (about 10) Turkey pepperonis (1/8 lean total, 1/4 lean pp)

  • 4 oz. Mozzarella cheese (3-6 grams fat/oz) (1 lean total, 1/2 lean pp)

  • 1/2 cup Rao's Marinara Sauce (<5 carbs) (2 greens total, 1 green pp)

 

Directions:

  1. Preheat oven to 425F.

  2. Brake cauliflower into pieces and pulse in Food Processor until it is a rice-like texture.

  3. Microwave cauliflower rice for 8 minutes (do not cover).

  4. Stir in cottage cheese, Parmesan cheese, Oregano, Garlic Powder

  5. Place mixture on parchment paper lined pizza stone

  6. Spread mixture into circle with spatula and press mixture down to compact.

  7. Bake for 30-35 minutes until starts to turn golden brown around edges.

  8. Add mozzarella cheese and pepperonis to top.

  9. Broil until cheese is melted about 5-10 minutes.
