Cheesy Cauli-tots

Low-Carb Cheesy Baked Cauliflower Tots

Servings: 2 people, 6 tots pp, 2 greens pp, 1.5 condiment pp, 0.21 lean pp,

1 fat each person pp

Ingredients:

  • 1/2 head cauliflower, about 2 cups riced (2 greens)

  • 1/3 cup reduced fat sharp cheddar (0.05 lean)

  • 1/4 cup reduced fat grated Parmesan cheese (1 condiment)

  • 1.5 T almond flour (0.5 fat)

  • 1/4 tsp Salt (0.5 condiment)

  • 1 egg (0.16 lean)

  • Non-stick spay (0.5 fat)

Directions:

  1. Preheat oven to 400F/200C. 

  2. Spray two 12 count mini muffin tins with non-stick spray.

  3. Rice the cauliflower in a Food Processor

  4. Microwave the cauliflower for 2 minutes uncovered.

  5. Put cauliflower, cheese, almond flour, salt in a bowl and stir to combined. 

  6. Add the egg and stir well. 

  7. Use a one-tablespoon cookie scoop or a one-tablespoon measuring spoon to scoop out even spoonfuls of the mixture into the mini muffin tin. 

  8. Press down on each tot. This will make sure the tots hold together well.

  9. Bake 15 minutes. 

  10. Using a spatula turn each tot over in the muffin tin.

  11. Bake another 15 minutes, or until tots are nicely browned on both sides. 

  12. Serve hot! They taste best right out of the oven!
