Meatballs and Spaghetti Squash
Servings: 4 people, 16 meatballs total, 4 meatballs pp
1 leanest pp, 3 greens pp, 3 condiments pp, 2 healthy fats pp

Ingredients:
Meatballs
-
1.5 lbs Ground Turkey (3.88 leanest total, 0.97 leanest pp)
-
1/4 cup Parmesan Cheese (4 condiments total, 1 condiment pp)
-
1/4 cup Egg Whites (1/8 leanest total, 1/32 leanest pp)
-
1 cup Fresh Basil (1 condiment total, 1/4 condiment pp)
-
1/2 tsp Italian Seasoning (1 condiment total, 1/4 condiment pp)
-
1/2 tsp Ground Oregano (1 condiment total, 1/4 condiment pp)
-
1 Tbsp Dried Parsley (1 condiment total, 1/4 condiment pp)
-
1/2 tsp Garlic Powder (1 condiment total, 1/4 condiment pp)
-
1 tsp Minced Garlic (1 condiment total, 1/4 condiment pp)
-
1/2 tsp pepper (1 condiment total, 1/4 condiment pp)
-
1/4 tsp Sea Salt (1 condiment total, 1/4 condiment pp)
-
4 tsp Olive Oil ( 4 healthy fats total, 1 healthy fats pp)
Spaghetti​​
-
4 cups Spaghetti Squash, about 1 small squash (8 greens total, 2 greens pp)
-
4 tsp Olive Oil ( 4 healthy fats total, 1 healthy fats pp)
-
1 cup Rao's Marinara Sauce (4 greens total, 1 green pp)

Directions:

Pre-heat the oven to 375 F
-
Cut the Spaghetti Squash in half lengthwise -- If you have a hard time cutting the squash you can microwave it for a couple minutes to make it easier

Scrap out the seeds
-
Place Spaghetti Squash cut side down on an oiled baking sheet and put into oven (for about 40 minutes)

While the Spaghetti Squash gets started baking, mix together Meatball ingredients, except oil
-
Form into 16 balls
-
Place the meatballs on an oiled baking sheet and put in oven (for about 30 minutes)
-
Heat the Rao's Marinara Sauce in a pot on the stove or in the microwave
-
Use a fork to scrap the squash into spaghetti stands
-
Plate: 4 meatballs, 1 cup Spaghetti Squash, 1/4 cup sauce for each person

Modifications for non-dieting hubby:
I was prepared to make my hubby regular spaghetti for this recipe and let him eat the rest of the meatballs, instead of just 4 lol. BUT he decided to be brave and try spaghetti squash. He liked it! AND he said it was so filling that the 4 meatballs were enough! I was pleasantly surprised! I immediately added it to our rotation of meals!
